
Craig: I’ve been trying to eat more vegetables and for me frozen or canned is what I have to do to make it happen. Fresh just doesn’t happen when I’ve got travel and getting to the store every week is hard. So which is better between the two, frozen or canned??
Megan: I’m glad you are trying to eat more vegetables and my initial answer is to go with frozen. Although some preservatives and sodium might be added, it is much less than the salt filled liquid canned items sit in. With that said, if you do go with canned because a freezer isn’t always available, make sure you drain and rinse off the vegetables in a can. My mom taught me that trick at a young age, even with a can of tuna to get most of the sitting salt off. Fresh is best, but the nutrients from vegetables can still be obtained from frozen and even canned.
