Valerie: Question …Hey Megan, this Thanksgiving I don’t want to blow my healthy eating routing and I want to bring a dish I can enjoy and so can others that won’t blow it. The easier the better since I’ve got a toddler and I’m not the best chef.”

Megan: Answer … Grandmother’s recipes always work well. Try Grandma’s White Zucchini Recipe:

  • 12 White Zucchini’s washed. Need to be a room temperature. Cut the end off and empty the inside with a spoon making sure to not puncture the sides
  • 1 small pack of ground beef (85 to 90% lean) or ground turkey meat
  • 1 big bottle of V8 tomato juice, low sodium (need enough to cover zucchini when in a big pot
  • 2 tsp cinnamon2 tsp butter (I use I Can’t Believe It’s Not Butter)

Mix the beef or turkey, rice and butter together. Warm the butter in the microwave to soften. Stuff the zucchini with the mixed beef, rice and butter.

Add to a big pot and cover with V8 and add cinnamon.High to boil then let cook on medium for approx. 30 mins.  Serves about 4 to 6 people (most enjoy 2-3 each)
