Cindy: Is it true how ripe a banana affects your blood sugar level??

Megan: Bananas that are more ripe actually do cause blood sugar to rise faster versus a more yellow/green banana. The more ripe the banana, the more sugar and less resistant starch it has, so this means it is higher on the glycemic index (GI) (making it spike blood sugar faster). I certainly don’t like green bananas and do like the sweeter bananas with brown spots. This makes sense because they do have more sugar.
