Belching Beaver Brewery Tavern & Grill Set to Open

It was a cool, misty Saturday afternoon. The scheduled Rhythm & Brews event had been cancelled and postponed due to weather. None of this stopped a nice turn out for a “soft opening” of the Belching Beaver Brewery Tavern & Grill as visitors kept arriving to take in the décor and get a taste of the soon to open newest downtown Vista establishment. Belching Beaver had planned to open the outside patio area to visitors during the Rhythm and Brews festival, but the cancellation gave owners Dave Mobley and Tom Vogel a chance to get their team in action and quickly prepare the inside restaurant and bar area for viewing. There is still quite a lot to be done, prior to the official opening last week in April  (we will give you an exact date as the opening draws closer)  but those in attendance saw enough to know this new business in Historic Downtown Vista is going to be a beautiful restaurant and definitely a popular addition to Vista’s already well known brewery scene.

Belching Beaver is only 3 ½ years old and already has a large brewery  room in Vista. Their original plan was to open a tasting room on Main St. in Historic Vista, but when the First National Bank of Southern California Bank building became available the decision was made to go for a larger facility and add not only additional brewing equipment, but also a tasting room and restaurant. The tavern and grill will feature 66 beers on tap, which will include beers from other North County brewers as well as a wine tasting room, wine on tap, a full menu restaurant and outdoor patio area with walk-up bar. Serving other North County beers will be used to promote craft beers that are becoming such a part of the North County experience. They also will soon have a full liquor license to offer drinks of all kinds.  They expect the tavern and grill to be open from 3:30 until 10 pm on weekdays and from noon until 10 or 11 pm on weekends. Plans for the future will include adding smaller tanks for brewing different varieties of beers at this location to go along with the 4 large brewing tanks currently in operation. P1090520


Quality Control Manager and Brew Master Thomas Peters said getting the 4 large tanks into the brew room was very challenging as they had to use lifts and slings and lay the tanks on their side then lift the tanks upright in a small area. Peters has been with Belching Beaver for 2 ½ years and is excited about the challenges being offered with the opening of this new brew site.

P1090518Dave Mobley, COO/Brewery Architect, said this empty bank building was perfect for creating the restaurant and brewery. They used many of the existing features inside the building. Patrons will see beautiful wood designs complemented by a large central bar with lights and steam to give the sense of fire coming out from the center of the long bar. The large central area also has ample table and booth seating and the long bar will feature digital tap displays of what is offered on tap. T.V.’s will line the upper area of the bar and smaller T.V.’s will display a variety of messages and information. The bank safe will be the wine tasting room complete with walls of bottled wine and in the middle a glass topped table that was once one of the banks set of safe deposit boxes. Dave said they will predominately offer California wines.


As you walk through the entrance, patrons can continue outside to an outside bar area and a large patio area with outdoor furniture and fire pits scattered around giving a very “woodsie” camping feel to the area. The white walls of the Broadway Vista Theatre are next to this area and David Mobley said they hope to use the walls for various events like movie nights, sporting event viewing – like the Super Bowl and others, and advertising projected on the walls.

P1090512Executive Chef Ramiro Guerra is still working out the final details of his menu, but it is close to being ready for the opening. He describes the menu as “world fusion” and himself as an heirloom style chef. By this Ramiro said he loved learning everything he could about the food he uses in his cooking and liked researching the dishes he prepared. He said he wanted to stay away from a normal menu and the menu would change as he added additional dishes. Belching Beaver plans on getting most of its produce from within a 12 mile radius of downtown Vista. Companies like Palmquist Elementary School Farms, Cyclops Farms and Olive Crest Farms will be used for produce. Ramiro plans on making everything from scratch as much as possible and using various beers from Belching Beaver in many of the recipes.  As the restaurant part of the Tavern and Grill grows the kitchen will add a smoker and an outdoor grill.

A sampling of dishes to be offered include:

  • Beaver Small Nibbles – Roasted Bone Marrow, House Smoked Seasoned Wings, Andouille corn Dogs, Seared Scallop and Prawn Skewer, Fried Cauliflower and Leeks, Tri-City – 3 sliders paired with 3 beers, London Fish Taco and much more.
  • Brewers Flat Breads – Quattro Fromage, BBQ Smoked Duck Breast, and “The Pizza” and more
  • Beaver Building Materials – San Diego Salad, South Pacific Salad, Duck Cobb Tower, Spin-asil-Berry Thyme
  • The Beavers Tail (Features) – Garlic Chicken, Central American Steak, Baked Wild Salmon, Brasilian Steak, Brontosaurus Bone, Spinach and Cheese Stuffed Individual Meatloaf, Caramel Pork Chop, Banana Leaf Steamed White Fish, Lilikoi Glazed Pork, Corn Husk Chicken, Beaver Banh Mi and more and each dish will have a variety of house made sauces available.

Along with this, Chef Ramiro said he will offer only one Burger on the menu, but it will be a burger like no other burger around. It will simply be called “The Burger” complete with House Cut Beaver Seasoned Fries.


The menu looks tremendous, the restaurant is amazing looking inside, the beers are incredible and the atmosphere will be unlike any other restaurant in Vista. The owners are excited about opening in Vista and said they have had very positive and encouraging support from Vista City officials every step of the way making the transition from their breweries and tasting rooms to this Brewery Tavern and Grill a lot easier than first thought. Opening Day can’t come soon enough.
